M is for... Mango

In a very similar manner to cherries, mangoes are another fruit which lend themselves perfectly to cordials and syrups. Mangoes have a lovely, bright orange colour and (like pineapple) a sweet, syrupy juice. This recipe for mango cordial can be diluted and enjoyed as a long drink, with still or sparkling water. As ever, it could also be poured over deserts for a truly tropical flavour!

If you are feeling suitably exploratory, why not try adding some other flavouring to the basic Mango Cordial – ginger and lemongrass are particularly good.

Mango Cordial

Ingredients

3 Ripe Mangoes

150g Caster Sugar

Water (to cover)

For extra (optional) taste:

2 Stalks Lemon Grass

5cm Piece of Ginger

1 Vanilla Pod

1 Lime

Method

Cook the Mango, sugar (to taste) and water in a large saucepan and heat the fruit until its juices are running freely.

At this point, you may want to add extra flavours, in the form of lemon grass, ginger, vanilla and lime juice. Cook the syrup for a further ten minutes to ensure all these flavours are combined.

Carefully strain the liquid through a clean muslin cloth.

Pour into sterilised jars or bottles to serve.
